Introduction:

Zafrani Nargisi Kebab, a regal dish and is perfect representation of rich and diverse culinary heritage of subcontinent. Ingredients:-

– Mince 600 gm 
– Split begal gram 300 gm or 1&1/4 cup
– Boiled eggs 
– Onions 3 medium size 
– Black cardamom 5
– Cloves 10 
– Green cardamom 12 
– Black pepper 1 tsp 
– Fennel seeds 1 tsp 
– Cumin seeds 1 tsp 
– Black cumin seeds 1/4 tsp 
– Mace flower 1 
– Nutmeg small piece 
– Ginger garlic paste 3-4 tsp
– Salt 1&1/4 tsp 
– Bay leaves 3-4
– Red chilli powder 1 tsp
– Coriander powder 1 tsp 
– Turmeric powder 1/2 tsp
– Poppy seeds 1 tsp 
– Water 1 cup 
– Desiccated coconut 4 tsp 
– Green chillies 2-3 tsp 
– Ginger 2-3 tsp 
– Onions 4-5 tsp 
– Coriander leaves
– Saffron essence 1/2 tsp 
– Clarified butter as required 

– Cooking oil for frying

For soaking :- 

– Milk 2 tbsp 
– Saffron 2 pinch
 

For deep the kababs:- 

– Coriander leaves 
– Black pepper powder 1/4 tsp 
– Salt 1/4 tsp
– Milk  2 tbsp 
-Turmeric powder 1/4 tsp
 

      Let’s Start To Make

 Instructure:

1. So to make it first we will prepare a spice of it, so here we have taken five big cardamoms, 10 cloves, 12 green cardamoms, and one tea spoon of black pepper, one table spoon of Fennel Seed, one table spoon of cumin seeds. 
2. White cumin is equal to a quarter teaspoon of political cardamom. We will prepare along with this we have added 1 teaspoon of zafran along with it. If it is done, we have to prepare all these things, then we have to throw them away.

3. So here we took the cooker and put 600 grams of meat and will add it and that I have to take it a bit thickly chopped, piece is quite thickly chopped so it is finely chopped. Also, the taste is very good. 

4. Here, we have taken 300 grams of chickpea dal. Add about 1/2 cup of it. We washed it and washed it well. According to the calculation, you can take less, you can also take half a cup, it is up to your choice.
5. We will add the hot spices that we prepared and about four table spoons of coconut paratha will be added to it. And 3 to 4 table spoon of ginger garlic paste will be set. One and a quarter table spoon we will cut salt in it.
6. You can add according to your taste. 
1 teaspoon of red chili powder will be added, one teaspoon of coriander powder will be added and half a teaspoon of turmeric will be added, then we have added all these spices to it, then these spices are the same, almost like Syrian kebabs and the same type. 
7. It also has a taste but it will have zafrani flavor and when we add egg to it and when it becomes Nargisi kabab, it will be different. It becomes too much. You must try this way once. After mixing all the ingredients well, add half a cup of water. If the water seems a little less, then add half a cup of water. 
8. There should be a little water, so here we have added half a cup of water. Close the cooker and let it cook for about fifteen minutes ,After re-opening cooker, if there is water in it, give it a good dry.

9. Now cool it well and grind it ,Now add two tablespoons of zafran to it, Which is to be placed some time ago. Add zafran essence for extra flavor and in addition to this we will add some green spices which is what we call shami kabab now but for this we have to chop it up very fine so two to three table spoons we have green chillies and ginger finely chopped. Add four to five tablespoons of very finely chopped onion.

 can also grind onions because when you fill the eggs, you slice it, if your spices are thick, every cut will have pieces of your curva, and they will start to break quickly. Now take some boiled eggs and cut them into medium size pieces and put these egg pieces inside the kebab.

11. Now take as much spices from the prepared spices as is required for Shami Kebab, take a piece of egg and set it well inside the kebab and Prepare all the kebabs in the same way. Now to fry the kebabs, take two eggs, add green coriander and some chopped black pepper and add two table spoon of milk to it and add some turmeric and add salt as per your taste and mix them well.
12. Now dip the kebabs in this cracked egg and fry well in heat oil. Now fry them until both sides get a nice brown color and serve it with ketchup and enjoy it.
