Melt the butter in a large saucepan over medium heat.
Add the chopped onion and cook gently until softened.
Stir in the diced potatoes and cook for a few minutes.
Add the watercress and cook until just wilted.
Pour in the stock and add the bay leaf.
Bring to a boil, then reduce the heat and simmer for 15â20 minutes until the potatoes are tender.
Remove the bay leaf and blend the soup until completely smooth.
Return to the pan and stir in the cream.
Season with salt, black pepper, and a pinch of nutmeg if desired.
Reheat gently without boiling and serve hot with a swirl of cream and crusty bread.
