Ingredients
  

For the Base
  • 200 g digestive biscuits or Graham crackers
  • 100 g unsalted butter melted
For the Filling
  • 500 g full-fat cream cheese
  • 100 g caster sugar
  • 300 ml double cream
  • Zest of 1 orange
  • 3 tbsp fresh orange juice
  • Pulp of 3 passion fruits
  • 1 tsp vanilla extract
  • 2 tsp powdered gelatine or 2 gelatine leaves
  • 3 tbsp warm water
For the Topping
  • Pulp of 2 passion fruits
  • 1 tbsp icing sugar optional
  • Orange zest
  • Fresh orange slices optional

Equipment

  • 20cm (8-inch) springform tin
  • Mixing bowls
  • Electric mixer or hand whisk
  • Food processor or rolling pin

Method
 

  1. Crush the digestive biscuits and mix with melted butter.
  2. Press the mixture into a lined 20cm springform tin and chill for 30 minutes.
  3. Dissolve the gelatine in warm water and allow it to cool slightly.
  4. Beat the cream cheese and caster sugar until smooth.
  5. Add the orange zest, orange juice, vanilla extract, and passion fruit pulp.
  6. Whip the double cream to soft peaks and gently fold it into the filling.
  7. Stir in the dissolved gelatine until fully combined.
  8. Pour the filling over the chilled biscuit base and smooth the top.
  9. Refrigerate for at least 4 hours or overnight until fully set.
  10. Decorate with passion fruit pulp, orange zest, and fresh orange slices before serving.

Notes

  • Use full-fat cream cheese for the smoothest texture.
  • Dissolve the gelatine completely before adding it to the filling.
  • Chill the cheesecake overnight for the cleanest slices.
  • Fresh passion fruit provides the best flavour and appearance.
  • Do not overwhip the cream, or the filling may become grainy.
  • Keep the cheesecake refrigerated until serving.
  • Decorate just before serving for the freshest presentation.
