Ingredients
  

For the Biscuit Base
  • 200 g digestive biscuits crushed
  • 100 g unsalted butter melted
For the Cheesecake Filling
  • 400 g full-fat cream cheese
  • 600 ml double cream
  • 100 g icing sugar
  • 1 teaspoon vanilla extract
  • 300 g fresh strawberries finely chopped and lightly crushed
For the Strawberry Topping
  • 250 g fresh strawberries sliced
  • 2 tablespoons strawberry jam gently warmed

Equipment

  • 20cm Springform Cake Tin
  • Mixing bowls
  • Electric Hand Mixer or Stand Mixer

  • Baking parchment

Method
 

  1. Line a 20cm springform tin with baking parchment.
  2. Crush the digestive biscuits into fine crumbs.
  3. Mix the biscuit crumbs with the melted butter until evenly coated.
  4. Press the mixture firmly into the base of the tin.
  5. Chill the base for 20 minutes.
  6. Beat the cream cheese until smooth.
  7. Add the icing sugar and vanilla extract, then mix until creamy.
  8. In another bowl, whip the double cream to soft peaks.
  9. Fold the whipped cream gently into the cream cheese mixture.
  10. Fold in the chopped strawberries until evenly combined.
  11. Spoon the filling over the chilled biscuit base and smooth the top.
  12. Refrigerate for at least 6 hours or overnight.
  13. Arrange the sliced strawberries on top.
  14. Brush the strawberries with the warmed strawberry jam for a glossy finish.
  15. Slice using a warm knife and serve chilled.
