Mary Berry No-Bake Chocolate Cheesecake Recipe

Ingredients
  

For the Biscuit Base
  • 200 g digestive biscuits finely crushed
  • 100 g unsalted butter melted
For the Chocolate Filling
  • 600 g full-fat cream cheese
  • 200 g dark chocolate broken into pieces
  • 300 ml double cream
  • 75 g icing sugar sifted
  • 1 tsp vanilla extract
For the Decoration (Optional)
  • 50 g grated or shaved dark chocolate
  • Chocolate curls
  • Cocoa powder
  • Extra whipped cream
  • Fresh raspberries or strawberries

Equipment

  • 20cm springform tin
  • Mixing bowls
  • Electric whisk or hand mixer
  • Heatproof bowl

Method
 

  1. Crush the digestive biscuits into fine crumbs and mix with the melted butter until evenly coated.
  2. Press the mixture firmly into a 20cm springform tin and chill for 20–30 minutes.
  3. Melt the dark chocolate over gently simmering water or in short microwave bursts. Let it cool slightly.
  4. Beat the cream cheese, icing sugar, and vanilla extract until smooth and creamy.
  5. Whip the double cream until soft peaks form.
  6. Fold the melted chocolate into the cream cheese mixture until fully combined.
  7. Gently fold in the whipped cream to keep the filling light and airy.
  8. Spoon the filling onto the chilled biscuit base and smooth the top with a spatula.
  9. Refrigerate for at least 4 hours, preferably overnight, until fully set.
  10. Remove from the tin, decorate with chocolate curls, cocoa powder, whipped cream, and fresh berries, then slice and serve.

Notes

  • Chill for at least 4 hours, but overnight gives the best texture.
  • Use good-quality dark chocolate (around 60–70% cocoa) for a richer flavour.
  • Fold the whipped cream gently to keep the filling airy.
  • Decorate just before serving for the freshest appearance.
