Mary Berry Lemon and Lime Cheesecake Recipe

Ingredients
  

For the Biscuit Base
  • 200 g Digestive Biscuits crushed
  • 100 g Unsalted Butter melted
For the Cheesecake Filling
  • 400 g Full-Fat Cream Cheese room temperature
  • 300 ml Double Cream
  • 100 g Icing Sugar
  • Zest of 1 Lemon
  • Zest of 1 Lime
  • 2 tbsp Lemon Juice
  • 2 tbsp Lime Juice
  • 1 tsp Vanilla Extract
For Decoration
  • Whipped Double Cream
  • Thin Lemon Slices
  • Thin Lime Slices
  • Fresh Raspberries
  • Blueberries
  • Extra Lemon & Lime Zest

Equipment

  • 20cm Springform Cake Tin
  • Mixing bowls
  • Electric Hand Mixer or Balloon Whisk
  • Silicone spatula
  • Rolling Pin
  • Measuring Cups & Spoons

  • Baking parchment

Method
 

  1. Line a 20cm springform tin with baking parchment.
  2. Mix crushed digestive biscuits with melted butter.
  3. Press firmly into the tin and chill for 20–30 minutes.
  4. Beat the cream cheese and icing sugar until smooth.
  5. Add lemon zest, lime zest, lemon juice, lime juice, and vanilla extract.
  6. Whip the double cream to soft peaks.
  7. Fold the whipped cream into the cream cheese mixture.
  8. Spoon the filling onto the chilled biscuit base.
  9. Smooth the top with a spatula.
  10. Refrigerate for at least 4 hours or overnight.
  11. Decorate with whipped cream, lemon slices, lime slices, fresh berries, and extra zest before serving.

  • Always use full-fat cream cheese for the best texture.
  • Chill overnight for cleaner slices.
  • Use room-temperature cream cheese to avoid lumps.
  • Warm your knife in hot water before slicing.
