Ingredients
  

For the Biscuit Base
  • 200 g digestive biscuits finely crushed
  • 100 g unsalted butter melted
  • 1 tbsp cocoa powder optional
For the Cheesecake Filling
  • 500 g full-fat cream cheese softened
  • 250 g mascarpone
  • 125 ml double cream
  • 200 ml Baileys Irish Cream
  • 100 g icing sugar sifted
  • 1 tsp vanilla extract
For Decoration
  • Grated dark chocolate
  • Chocolate curls
  • Shaved chocolate
  • Cocoa powder for dusting
  • Melted chocolate optional drizzle

Equipment

  • 20cm Springform Cake Tin
  • Large mixing bowls
  • Electric Hand Mixer or Stand Mixer
  • Rubber Spatula
  • Rolling pin or food processor
  • Measuring Spoons
  • Baking Paper

Method
 

  1. Line a 20cm springform tin with baking paper.
  2. Mix the crushed digestive biscuits, cocoa powder, and melted butter until evenly combined.
  3. Press firmly into the base of the tin and refrigerate for 20 minutes.
  4. Beat the softened cream cheese and mascarpone until completely smooth.
  5. Mix in the sifted icing sugar, Baileys Irish Cream, and vanilla extract.
  6. Whisk the double cream to soft peaks, then gently fold it into the cheesecake mixture.
  7. Spoon the filling over the chilled biscuit base and smooth the surface with a spatula.
  8. Cover and refrigerate for at least 6 hours, preferably overnight.
  9. Decorate with grated dark chocolate, chocolate curls, shaved chocolate, cocoa powder, or melted chocolate before serving.

Notes

  • Chill overnight for the firmest texture and clean slices.
  • Always use full-fat cream cheese and mascarpone for the creamiest filling.
  • Do not overwhip the double cream.
  • A springform tin makes removing the cheesecake much easier.
  • Dip a sharp knife in hot water and wipe clean between slices for neat presentation.
